Cichorium intybus, Chicory root, apparently previously well known as camp coffee when coffee was scarce. It is delicious with out without milk, and cardamon adds a beautiful note. A teaspoon goes a long way, and you can use a traditional coffee press if you like. Here I have just made it in the cup and use my metal straw to enjoy!.
That along with its health giving properties what's not to like. We often add it to patients mix's as a prebiotic. Full of inulin, it helps beneficial microbes to prosper.

It has such a wonderful root I'm hoping to cultivate it next year. I grew some this year to enjoy the flower. This batch is from the Organic herb trading company.
